Dinnertime. Most days I dread it. Not that I don’t like to eat–it’s that I have trouble deciding what to cook and finding the the time to make up a good quick family meal. On these days it is great to have a bit of a motivator from a meal starter sort of kit like Kraft’s Recipe Makers. Admittedly, I’m a bit of a control freak about ingredients in my family’s meals, and it’s probably because of that I love this box of sauces. The ready made sauces provide the flavor, and I am able to ensure the quality of the the other ingredients I’m serving my family while getting a little shortcut in getting a quick meal on the table.
When I took a trip to Wal-Mart to pick up some things for dinner tonight, I picked up a box of Kraft Recipe Makers Asian Fish Tacos. There were lots to choose from–New England Pot Roast, Tex-Mex Chicken Fajitas, Three Cheese Chicken Florentine, Chicken Cacciatore and more yummy comfort food flavors. Any would have hit the spot, but I was craving something with some Asian flair today.
There are directions to make fish tacos on the box with some fish, slaw, tortillas and panko crumbs that sounded awesome, but since I can never leave well enough alone, I used the sauces to make an easy meal that fed a craving and packed in a few more veggies (and comforting carbs) than the tacos would have.
Short cut Chicken Teriyaki Pineapple Skewers served over soba noodles with snow peas and sweet peppers.
- Kraft Recipe Makers Asian Fish Tacos meal starter it
- 1 lb boneless skinless chicken, cut into 1-inch cubes
- 1 cup resh pineapple chunks
- 1 12oz box soba noodles
- 1 1/2 cups snow peas, ends trimmed
- 1 cup sweet peppers
- 1/2 cup red cabbage, thinly sliced
Place chicken and ginger sauce from Kraft Recipe Maker kit in bowl and let marinade for 30 minutes.
Skewer chicken and pineapple on bamboo skewers, alternating ingredients. Cook skewers on hot grill, approximately 4 minutes on each side or until chicken is cooked through. While the skewers are cooking, add your sweet peppers to the grill, turning them over when the chicken is turned, and removing them from the grill with the chicken. Slice cooked peppers into strips.
Meanwhile, boil soba noodles in a medium to large sized pot until noodles are al dente. Add in the snow peas and cook for another 4 minutes. The snow peas should be cooked, but still crisp at this point. Drain the snow peas and soba noodles and quickly rinse with cold water. Place noodles and peas back into the pot, and add the grilled and sliced sweet peppers--you could use a clean bowl for this part but I say why dirty another dish? Pour the creamy teriyaki sauce from the Kraft Recipe Maker kit over the noodles and peas and toss until all the ingredients are coated.
When serving, dish out noodles with veggies into a bowl and add the pineapple chicken skewers on top.
When I bought the kit, I was thinking about the things I already had on hand at home and what I can get the kids to eat without much fuss. Chicken is almost always a winner, and our co-op’s produce box had snow peas and pineapple in it this week. The ginger sauce made a great marinade/glaze for the chicken, and kids in general seem to be more receptive to food on sticks, so skewers to serve our meat tonight sounded like a good idea!
It just takes a few minutes to thread the pineapple and chicken on the skewers. If you’re going to grill these over fire, make sure you soak your bamboo skewers first so they don’t catch fire.
I can never seem to light my outside grill myself without burning off my eyebrows (and my husband was at work today), so I used my grill plate for the stove to cook the chicken and sweet peppers. Make sure the chicken is cooked all the way through, and the peppers just slightly soft–they’re better to eat when they’re still mostly crisp. Slice up the peppers to put in the noodles.
To save time and dish washing, cook the soba noodles in boiling water until they’re almost done, usually about 4 minutes, and then throw in the snow peas and continue boiling until the snow peas are cooked but still crisp. Drain, rinse with cold water, then toss together the noodles, snow peas, sliced sweet peppers and creamy teriyaki sauce from the Kraft kit. I throw everything back in the pasta pot to combine, just because I like to wash as few dishes as possible.
Put the noodles in the bowl and your cooked skewers of chicken and pineapple on top and you have a comfort-food worthy dish that’s easy to make in not a lot of time!
My whole family named this meal a winner, and I’m happy to have one more easy go-to meal to serve!
