But I’ve found a trick that really helps with the dinnertime madness in the middle of the after-school activities, and I’m going to share it with you!

Planning, and having a prep-ahead meal plan, makes all the difference in the world in being able to serve up healthy meals at dinner time and keep stress levels low.

How much time is this plan going to take me?

Planning for a smooth week of dinners takes a couple of hours of prep on Sunday, and then just a few minutes at each meal to finish cooking. Plus, there are a LOT less dishes to wash every day because you’ll have made your mess on the first day. A little added extra bonus time back to you!

What kind of meals are in this plan?

Two of my family members have a gluten allergy, so this plan doesn’t include any wheat, but I promise the people who are ok with gluten love these meals just as much as if there were a whole cup of  flour in them.

There are two children with finicky taste buds in my house, so all the meals are also very kid-friendly (and adults will like them, too.) And we like balanced, healthy meals, so I’ve done as much of that as possible. If you feel like you need to throw in an extra veggie on any given day, go for it!

The dinners are designed for how much time I have to devote to cooking each day–on our no activity day, I have about 45 minutes, on activity days, 20-30 minutes, and I have one double header day where we have exactly 30 minutes at home to prep and eat a meal.

On double header day, for less than the price of a drive-through dinner, I pick up seafood meals in the frozen food aisle–specifically, Michael Angelo’s New seafood meals. I’m a label reader, and I felt good about serving this particular line on that day where I have zero time to cook. These dinners have real ingredients you can taste and pronounce, absolutely no preservatives or artificial ingredients, and are made with wild caught salmon and chemical free shrimp. PLUS, the Shrimp and Kale Piccata and Salmon Piccata are purely gluten free.
