Today, I’m sharing my winning S’mores cupcake bake sale recipe with you and how to make them the first item to sell out with fantastic packaging.

Last year alone, I raised over $1000 for a few charities I like to work with selling nothing but cupcakes. The standout cupcake favorite I sold? Hands down, it was my S’Mores Cupcakes. With marshmallow frosting topping chocolate cupcakes and a little graham cracker and Hershey’s Milk Chocolate bars for garnish, you not only have a cupcake shop worthy creation, but a cupcake people with throw dollars at.

Bake Sale Recipe: S’Mores Cupcakes

  • 2 dozen chocolate cupcakes, made from box or your favorite recipe
  • Marshmallow frosting (recipe follows)
  • 3 Honey Maid Graham Crackers
  • 2 Hershey’s Milk Chocolate bars

When doing large bake sale bakes, I do look for shortcuts. Sometimes that means buying undecorated cupcakes from the bakery, sometimes that means a box cake. You do you here! The important part of these cupcakes is the topping. 

When I’m making my cupcakes from scratch, my personal favorite for chocolate cake recipes is the Beatty’s Chocolate Cake recipe by Ina Garten. I have yet to find one as moist and flavorful, and don’t think I could top it if I spent a year in the kitchen experimenting. Really, I gave up on developing my own after I made Ina’s. The only thing that will throw you with this recipe is the consistency of the batter; it’s going to be soupy! Not to fear, this is the way it is supposed to be and the cupcakes will come out fantastic in the end.

If you want to go a semi-homemade direction, just make the cupcakes from a box mix and add a tablespoon of instant espresso to boost the flavor.

Marshmallow Frosting

4 egg whites
1 cup granulated sugar
pinch of cream of tartar
1 cup miniature Jet-Puffed Marshmallows
1 tsp. pure vanilla

In the top of a double boiler, over boiling water, combine 4 egg whites, sugar, and cream of tartar.

Cook over rapidly boiling water, beating for about 3-4 minutes or until the sugar dissolves into the egg white. I use a whisk, but if you have a hand-held mixer, use that!

Add the cup of marshmallows, and whisk until they are entirely melted into the mixture.

Remove the top of the double boiler from heat and place in the stand of your electric mixer if you’re using one. Put in the vanilla extract. Beat mixture for 5-7 minutes, or until stiff peaks form.

Assembling your S’mores Cupcakes

Once you have your cupcakes bakes and your frosting made, putting them together is pretty easy. I use a large disposable pastry bag with the end snipped off to make nice round swirls on top of my cupcakes. To make prettier swirls, position your pastry bag straight up and down over the cupcake.

From here, you have the option of taking a kitchen torch to the frosting and toasting it up a bit like a marshmallow over the campfire. They’re still fabulous without it! Since s’mores aren’t s’mores without chocolate bars, this next step is really important! Before the frosting sugars over and sets, add in a square of graham cracker and a square of a Hershey’s Milk Chocolate bar. If I have it on hand, I also like to sprinkle a little disco dust over top of my cupcakes so they sparkle for bake sales.

Packaging for the Bake Sale

Appealing packaging is always going to make your baked goods stand out. My favorite way to package up cupcakes at bake sales is to use clear plastic cups and a clear cellophane bag with some pretty ribbon.Having a bake sale? These S'mores Cupcakes are big sellers. Cupcake liners are also useful in making the cupcakes a little more colorful! Yes, you’ll be using a new, clean one here that the cupcake was not baked in. Just place your liner into a short clear plastic cup, drop in the cupcake inside, then place the cup in a cellophane bag and tie off with a ribbon. You can also place unfrosted cupcakes into the cups to make decorating and packaging a bit easier if you know this is what you’re going to do.

S'Mores Cupcakes

Yield: 2 dozen

S'mores cupcake recipe perfect for bake sales! Add pretty packaging and watch your bake sale proceeds soar. Use pre-made cupcakes or box mix for easiest assembly.

Ingredients

Marshmallow Frosting

  • 4 egg whites
  • 1 cup granulated sugar
  • pinch of cream of tartar
  • 1 cup miniature Jet-Puffed Marshmallows
  • 1 tsp. pure vanilla

Instructions

Prepare or purchase the chocolate cupcakes. The toppings are the start of the show in this recipe!

Marshmallow Frosting:

Add the cup of marshmallows, and whisk until they are entirely melted into the mixture. Remove the top of the double boiler from heat and place in the stand of your electric mixer if you're using one. Put in the vanilla extract. Beat mixture for 5-7 minutes, or until stiff peaks form. (Stiff peakes are where the peaks of the frosting stand straight up when the beaters are lifted. It'll help the frosting keep its shape when put on the cupcake.)

S'mores Cupcake Assembly

Fill a large disposable pastry bag with marshmallow frosting. Snip the tip and with the pastry bag straight up and down, start around the outside of the cupcake to make pretty swirls on top.

From here, you have the option of taking a kitchen torch to the frosting and toasting it up a bit like a marshmallow over the campfire. Before the frosting sugars over and sets, add in a square of graham cracker and a square of a Hershey’s Milk Chocolate bar.
