After some fun food experimentations, turns out I am sensitive to grains. No bread, flour, etc. etc. for me. At the mustache bash shower, I wasn’t the only one with some gluten adversity, so it gave me the chance to stretch some culinary creative muscles and make something new. And by new, I mean new to me.
Most will approach these bacon wrapped dates with a bit of trepidation when they see them. Dates? Really? But I swear they are better than candy. (Says the person who has been known to polish off a tray full in a sitting!) If you want to share, you might have to nudge your guests a tad, but just know they’ll be gone once you do.
Assemble these the day before your party, and cook them right before serving at your event.
Bacon Wrapped Stuffed Dates
Ingredients
- 12 slices thick cut bacon
- 24 pitted medjool dates
- 24 whole pecans
- 2 oz gorgonzola cheese
Instructions
- Preheat your oven to 400 degrees.
- Stuff each pitted date with a whole pecan and a small sliver of gorgonzola. Cut each slice of bacon in half so you have 24 pieces. Wrap each stuffed date with slice of bacon and secure with a toothpick.
- Bake on a cookie sheet for 8 minutes on each side or until the bacon looks done. Cool slightly before serving.

I never thought I would love dates--but wrapped in bacon and stuffed with gorgonzola...well, you can't go wrong. Happy snacking, Sandra!
