There are a few recipes from everyone’s childhood that are so memorable you can still almost taste them if you close your eyes and think about it. My mom had the BEST zucchini bread recipe ever — especially during summertime when the garden overflowed with zucchini squash, zucchini bread was always around. We didn’t care that there was good for you green stuff in it, zucchini bread was just GOOD!
Having mom’s zucchini bread now is just like having a little hug from her, and I love that I have such great memories of it. As I’ve gotten older, I appreciate those food recollections that fill me with warm fuzzies. I can tell you there is nothing better than sitting down with a thick slice of zucchini bread than sitting down with a thick slice of zucchini bread and a giant mug of coffee. Dunkin’ Donuts® coffee if I’m really treating myself…and if I’m being totally honest, I treat myself to good coffee a lot!
This bread is perfectly sweet and moist with just the right amount of crunchy bits to it. The secret ingredient here is pineapple–it adds just the right amount of sugar, zing and moisture to the bread to make it memorable.
When I said there’s nothing better than an awesome zucchini bread recipe and a big cup of Dunkin’ Donuts coffee, I may have been fibbing a little. The best thing ever may be doing these things with a friend.
Relaxing and having some down time with a friend over coffee is a truly excellent way to spend an hour or two. When I was making my zucchini bread up, I called my friend Kim to come over for a visit so we could sit and enjoy for a bit. Keeping things SUPER EASY–which is the way you will keep repeatedly doing stuff like this–I put together a quick coffee tray with cream, sugar, and a few Dunkin’ Donuts K-cup varieties I had picked up at Publix. (Chocolate glazed donut anyone??)
Besides the coffee, we had some of that best zucchini bread ever with a few plates and napkins. Just the right amount of effort for a nice visit with a friend to unwind!
If you’re not a k-cup kind of gal, Dunkin Donuts is sold in bags–the dark roast is my favorite.

Since you’ll be at Publix anyway, pick up the ingredients to make some zucchini bread!
The recipe is pretty much a super easy dump and stir quick bread. Only bit of advice I have for you is about the zucchini. I personally use my food processor to shred my zucchini, but you can use a grater if you don’t have one. Mileage is going to vary on how many zucchini you’ll need for two cups; I used 1.5 medium sized zucchini to make my bread this go-around

Best-Ever Zucchini Bread Recipe
Ingredients
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups sugar
- 3 eggs
- 1 cup vegetable oil
- 2 cups shredded zucchini
- 1 8- oz. can crushed pineapple drained
- 1/2 cup chopped nuts
- 1/2 cup raisins
Instructions
- Preheat oven to 350 degrees.
- Stir together flour, baking soda, baking powder, salt and cinnamon in a large mixing bowl. Add eggs, oil and sugar and blend. Stir in zucchini, pineapple nuts and raisins. Divide batter between two prepared loaf pans. Bake for 45 minutes or until toothpick comes out clean.

This reminds me that I haven’t had enough zucchini bread or Dunkin Donuts coffee in my life. I love that this bread is chock full of pineapples, nuts, and raisins. That combo just screams comfort food! Sharing it with a good friend makes it even better.
I made this bread and had a mini loaf myself! I make sure to share the larger loaf and froze one. DELICIOUS!!!!
I used coconut oil as it is healthier, with all the other good ingredients, one CAN eat a whole loaf without guilt.
