dessert-6One of the many places I write articles for is Celebrations.com. I loved the assignment I recently received to make a quick-fix, inexpensive dinner for company. I know we all run into entertaining at the last minute at some point! The best place to start with quick-fix is always with pre-made components. Like sundaes with a  little canned dulche de leche and cinnamon sugar crisped tortillas.

For a main dish, this Mexican Casserole uses rotisserie chicken to cut out cook time, and all the ingredients are are dump, mix, layer and bake–quick!
