My friend Kristen was such an inspiration for my latest round of posts at Celebrations.com. She manages to fortify and put veggies and grains into nearly everything she gives her kids…a pretty amazing feat! I managed to borrow a few of her recipes to share–and made up some of my own! Great ideas, but please be sure to share all ingredient information if you bring these to a cookout, a class party, etc. I am alarmed at the growing use of chickpeas, black beans, etc. in desserts because they cause instant anaphylaxis for me. I usually ask what's in things anyway, but I might never think an allergen like a bean is in a dessert. And a child with a similar allergy probably wouldn't even consider that a brownie treat at a party might contain beans. Just my 2 cents! :)
