Summer is my favorite time of year for many reasons, but one of the things that makes me so look forward to all that warm weather is getting outside! Playing outside and especially EATING outside make the summer months a fun and a happy time. With Publix, Cheetos and Fritos you can turn eating an everyday dinner into a lasting happy memory with a Walking Taco Bar like the one I’m going to show you how to make in this post.
Take it Outside!
Walking tacos are ideal for entertaining a crowd outside, or just for taking the family out on the back porch to eat as something new to keep life around the house interesting.
A walking taco is much more contained than a regular tortilla-type taco because it’s all in a cup and you eat it with a fork. We found both Cheetos and Fritos make a great crispy base for the tacos, depending on your favorite flavor. These hand-held tacos are absolutely perfect for hanging out in the backyard or combining some backyard games or other activity with dinner.
The basic premise of the walking taco is that you’ll layer your taco toppings into your cup just like you would a taco, without the mess of things spilling out the bottom of your tortilla. Set up your topping bar with the kind of stuff from Publix you like to serve your tacos with; the list here is just a suggestion. As a bonus, you can buy EVERYTHING at Publix pre-made and your family only has to assemble their walking tacos once they’re ready to eat.
How to Make Walking Tacos
This is a recipe for happiness—in a cup!
- Rotisserie Chicken, shredded
- Taco Chicken Seasoning (optional)
- Publix Sour Cream
- Publix Shredded Mexican Cheese or similar
- Diced tomatoes
- Lettuce, cut into strips
Taking a Publix-purchased rotisserie chicken and shredding it for serving is a great dinner shortcut. You can use the meat as-is or you can mix it up with a little taco chicken seasoning using the recipe below for your taco bar.
Set out all of your ingredients for people to load up their cups. Let each person put their personal tacos together just how they like them. For details on how to make the personalized cups scroll down.
Taco Chicken Seasoning
- ¼ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon garlic powder
Mix all seasonings together in a small bowl. Pour over shredded chicken and stir until completely blended.
The Ultimate Limeade Recipe
Our family LOVES this limeade recipe, and it’s an awesome accompaniment to Mexican-type foods such as the Walking Taco. Serve them up in a mason jar or margarita style glass for bonus points from your family.
- 4 cups cold water or Publix Soda Water
- 1 cup sugar
- 1 cup water
- 1 cup lime juice
In a microwave safe cup or bowl, heat 1 cup water and 1 cup sugar for 2 minutes, or until boiling. Remove from microwave and stir until sugar is completely dissolved and let cool. This makes a quick and easy simple syrup.
If you’re juicing your limes, you’ll need 4 to 5 large ones to make 1 cup. Add this juice plus the cooled simple syrup to your pitcher.
For a fizzy-type lime aid, use 3 to 4 cups soda water—dilute to taste. For regular lime aid, use cold water. Add a few slices of lime to serve.
How to Personalize your Walking Taco Bar
Parties, entertaining and even family dinners are all in the little details! Here are a few that are immensely simple to add to your walking taco bar that will make it really feel like a celebration and not just dinner. Make taking it outside FUN!
Clear plastic cups go glam with the addition of a few pieces of washi tape. Pick up the tape in your local craft store in bright colors.

Tissue Paper Fringe Banner
Cut double layers of 7×14 rectangles of colorful tissue papers. Fold the tissue paper over twine, gluing it to the twine with small dots of hot glue. Cut fringe into the twine and hang. See the full tutorial HERE.
