Midsummer’s Night Fairy Appetizer Menu

My family is all about food, and when there are guests at our home, they have come to expect something special. My father’s branch of the family tree hails from the New Orleans area and dad’s jambalaya and gumbo are legendary.  So as not to dissapoint the masses when they arrived for mom’s birthday where there was not a cajun delicacy to be seen, we had to step up and deliver some tasty items for our guests. As a good southern hostess, I’m sharing all the recipes I used to create this appetizer table!

It’s hard to say what was the favorite appetizer offering; we heard raves about everything!

 

{Spicy Black Bean Cakes with Sweet Potato Sauce and Cilantro Sour Cream}

 

 

 

I asked my brother (an accomplished man in the kitchen with more gadgets than I have) to come up with a one bite appetizer to fill porcelain wonton spoons. He didn’t dissapoint with this one. The black bean cakes are baked, not fried, so they are a healthy option in addition to being scrumptious. He found the base recipe for the cakes here, and adjusted the size to fit the spoons. The spicy sweet potato sauce came from here. He topped them with 8 oz of sour cream mixed with 3 tablespoons finely chopped cilantro and chives for garnish.

 

{Apricot Brie Puffs}

Did I mention everything on this menu was very easy to make or could be made way ahead of time? Or not by me? These apricot brie puffs disappeared so quickly, I didn’t get a chance to have one myself!

{Marinated Cheese}

This appetizer made its first appearance on my party menu several years ago after having it at my brothers wedding. I’m not below begging the caterer for recipes. Depending on how you plate it, it’s perfect for a nice affair or a casual evening of watching football with the boys.

{Honey Minted Fruit Shots}

This recipe is a loose guideline; any kind of fruit will work here! Use bigger bowls and bigger chunks for a nice variation on fruit salad when you’re not throwing a fancy party.

{Herb Crusted Pork Loins Rolls}

After you’ve had these once, they will be something you crave. I had originally planned to have another appetizer offering in place of this one, but my mother insisted people would be showing up hungry–as in what we laid out needed to equal a dinner. I love making these for picnics and they work equally well on a party appetizer table, just add a jar of fancy mustard!

{Other Food}

There’s never enough time when throwing an event to make absolutely everything.  We served fresh vegetables and made a nice presentation with carved radish roses and curled carrots, and put out three different dips we bought at a warehouse store.
