Dairy-Free Ice Cream Recipe for Healthy Summer Snacking

dairy-free ice cream recipe-9In summer, more than any other season, I crave ice cream. Rich, luscious melting in sweet rivulets across your tongue ice cream. Of course, satisfying that craving can’t happen now that dairy is off the menu. Thankfully, this summer treat has been saved by three ingredients and the blender — we can make all the dairy-free ice cream we want using berries, bananas and Silk Coconutmilk! Coconut Berry Dairy-Free Ice Cream has the same rich mouthfeel to it as the cow-milk variety, and it’s a treat pretty low in calories so you can indulge in it more often. Plus, you don’t even need an ice cream maker to make it!

On to making the ice cream! It’s pretty quick and easy, as everything just gets pulled out of the freezer and dropped in the blender. Bananas that get too ripe get thrown into the freezer at my house, and we pull them out to make pancakes or treats like this. The fact that they’re ripe makes the ice cream all that sweeter! Just a quick tip–when you freeze your bananas, peel them first. It’ll make using them later much easier.

After you have out all your ingredients, you can put the Silk Coconutmilk and the frozen berries (I used raspberries and strawberries) into the blender first and puree them. I find if I put too much frozen solid fruit in the blender at the same time, it doesn’t all get chopped up, so adding in portions helps get a smooth consistency.

After your strawberries are thoroughly blended toss in the bananas and coconut flakes. My kids didn’t like the flakes, but I thought they were wonderful…therefore, they are optional for this recipe.

dairy-free ice cream recipe-4 dairy-free ice cream recipe-5Spoon it up into little dishes and serve. You’ll have to eat this one right away, and sadly, it doesn’t take to refreezing well. Just a good excuse to have seconds, I say!

Dairy-Free Coconute Berry Ice Cream

A healthy frozen snack that's a lot like ice cream. Perfectly paleo-friendly, gluten free and dairy free! You'll want to eat this immediately, as it does not refreeze well.

Ingredients
  

  • 2 cups frozen berries
  • 1/3 cup Silk Coconutmilk
  • 1 cup frozen bananas
  • 1/4 cup unsweetened coconut flakes optional

Instructions
 

  • Place frozen berries and Silk Coconut milk in the blender, and puree until smooth. Add bananas and coconut flakes and puree again. Spoon into bowls and serve immediately.
