I have a present for you this Christmas. It’s a tip and a bit of advice. You don’t have to kill yourself making everything from scratch for your holiday (or any) party. There is this wondrous place in the supermarket they call the frozen food aisle. It has lots and lots of premade yummy food that you can spiff up or put a quick to make dip with and serve as a festive holiday appetizer or even a healthy quick dinner in no time at all. In fact, the tiny spring rolls from Rich’s SeaPak have long been a party favorite of mine! They can be picked up and eaten with little mess and are perfect for dipping. These spring rolls are available everywhere, but these were picked up at my local Wal-Mart.
My rule of thumb when I throw parties is to make at least two of the dishes myself, then I fill in with easily put together and convenience foods. The last thing you want to do as a hostess is spend the entire gathering in the kitchen, and that means less cooking!
Look at all those yummy ingredients inside! They bake up crisp in just a few minutes, and the insides are remarkably fresh.
I made up a quick shrimp sauce style dip to go with these yummies that you can use to create a easy holiday appetizer (or snack!)
Spring Roll Dipping Sauce
- 1 cup softened cream cheese
- 1/2 cup mayonaise
- 1 1/2 tablespoons sugar
- 1 tablespoon rice vinegar
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 2 teaspoons soy sauce
- 1 1/2 tablespoon lemon juice
Stir together in a bowl until thoroughly combined. Store in the refrigerator in a tightly sealed container.
This dip is also fantastic with vegetables. I had quite a few smothered in this sauce while I was taking these pictures–it was a little bit irresistible! Throw in a few RIch’s SeaPak shrimp spring rolls, and you practically have a complete meal.
